A Pepper for Papa!

Celebrate Father's Day by treating him like a king! This is the day for dad to kick back and relax with a refreshing beverage, free of the honey-do list.

As for a gift, forget the necktie (AKA "fancy noose"), and consider something to go with his favorite hobbies. Maybe it's a dwarf lemon or lime tree for the bartender/host dad. Cherry-Chicken Salad


What You Need

  • 2 cups fresh cherries (pitted and halved)
  • 1/2 cup mayonnaise
  • 1 tablespoon orange juice
  • 1 teaspoon soy sauce
  • 1/4 teaspoon ground ginger
  • 1 cup medium sharp cheddar cheese (cubed)
  • 2 cups cooked chicken or turkey (cubed)
  • 1/2 cup celery (diagonally sliced)
  • 1/3 cup green onion (sliced)

Step by Step

  • Combine mayonnaise, orange juice, soy sauce and ginger. Mix well.
  • Combine cherries, chicken or turkey, cheese, celery and onion; toss.
  • Let stand 10 minutes.
  • Spoon cherry mixture onto bread and top with the mayonnaise mixture.

For an even healthier version of the recipe, use whole leaves of green or red leaf lettuce instead of the bread.
